Ingredients:
- ½ cup chopped fresh broccoli florets
- ½ cup diced fresh mushrooms
- ½ cup diced red pepper
- ½ cup diced orange pepper
- 1 cup fresh spinach leaves
- 4 large eggs, lightly beaten
- ¼ cup milk (optional)
- Salt and pepper to taste
- Olive oil for cooking
Instructions:
- Heat a tablespoon of olive oil in a non-stick skillet over medium heat.
- Add the diced peppers and mushrooms to the skillet and sauté for 2-3 minutes until slightly softened.
- Add the chopped broccoli florets and spinach leaves to the skillet and cook for another 2 minutes until wilted.
- In a bowl, whisk together the eggs, milk (if using), salt, and pepper.
- Pour the egg mixture over the vegetables in the skillet.
- Using a spatula, gently stir the mixture until the eggs are cooked and scrambled, about 3-4 minutes.
- Remove from heat and serve hot.
